Crock Pot Cabbage Roll Casserole

My friend, Vicky Crowley, brought this dish to work today for several us to try. There is a group of us at work who share dishes/recipes to get new ideas for making new and different meals. She changed it up a bit and didn't roll the cabbage but made it into more of a casserole. It was fantastic. I had seconds, as did most of us at lunch today!

You can make a gluten free version of this recipe if you use a gluten free tomato soup. Make sure to read your labels because not all tomato soups are gluten free! As a matter of fact, read the labels on the tomato sauce and diced tomatoes to ensure all brands you use are gluten free.

My husband loves cabbage and I cant wait to make this for him! It's definitely a keeper!!

Ingredients: 
  • 1½ lbs lean ground beef or pork (or a mixture of the two)
  • 3 cloves garlic , minced
  • 1 onion, diced
  • 1 (15oz) can tomato sauce, divided
  • 1 cup water
  • 1 can condensed tomato soup (read your labels if you are gluten free to ensure you get a gluten free brand)
  • 1 (28 oz) can diced tomatoes, undrained
  • Salt & Pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • ¾ cup long grain white rice, uncooked
  • 1 head cabbage
  • ⅓ cup water
  • 1½ cups Mozzarella cheese (optional)

Directions:


1. Brown beef or pork, onion, garlic and seasonings over medium heat until no pink remains. Drain.


2. Add 1 cup tomato sauce, 1 cup water and ½ can of tomato soup and diced tomatoes to the beef.


3. Stir in rice, and mix well until heated through. Remove from heat.


4. Chop cabbage into 4 wedges and remove core. Chop into chunks (Vicky's were about ¾"x1.5").


5. Layer ½ of the meat mixture and ½ of the cabbage in the slow cooker. Repeat layers.Place half the meat and then half the cabbage in cooker.


6. Combine the remaining tomato soup, remaining tomato sauce and ⅓ cup water. Pour over top of cabbage.


7. Cook on low 4-6 hours or just until rice is cooked. Once done, turn slow cooker off, sprinkle mozzarella cheese on top and let sit 10 minutes to set and melt cheese. Add salt and pepper to taste.

Brenda Rowland's Chicken and Rice Casserole

Well, the southern girl is coming out in me....this recipe is not healthy and is not gluten free.  But it's beyond delicious!  Growing up in the south in a Southern Baptist church, we had pot lucks all the time.  This recipe came from our dear friend Brenda Rowland.  I called this one "Brenda Rowland's Chicken and Rice Casserole" for a long time growing up so the name sticks.  I'm not changing it...it's been almost 20 yrs since I've had this recipe!

My kids love this one....you could make this one gluten free with gluten free cream of chicken and cream of mushroom...butit wont taste the same.  Anyway - this one is beyond excellent!

Ingredients:

2 cans of Premium white chunk chicken (drain and smash up the chicken) OR boil your own chicken breast in garlic and salt and pepper.
2 cans sliced water chestnuts
2 “Boil in a bag” bags of rice (white or brown – your choice)
1 can cream of chicken soup
1 can cream of mushroom soup
2 cans chicken broth
1 tsp sage
1 oz jar of cheese whiz
½ onion
1Tablespoon butter
2 sleeves of Ritz crackers



Directions:

Combine all ingredients into a big bowl and stir together.  Make sure on the cheese whiz jar you use about 1/3 of a cup in your casserole.

Bake on 350 for an hour covered with aluminum foil.

Then, take ½ an onion and chop it up and sauté in butter.  Then take crumbled up ritz crackers and stir into a bowl.  Pour the Ritz crackers mixture on top of the casserole and broil until crackers are lightly toasted.

Saucy Chicken and Asparagus

It’s been about a week since I posted so I thought I would go ahead and post even though it’s late night here!  We went over to our friend’s house tonight and they made an excellent tasting dish so I asked my friend for the recipe and she gave it to me.  This one CAN be gluten free but it is not dairy free.  This one was excellent over rice and goes great with a side salad.  I think when I try this dish, I’m going to use a rotisserie chicken and see how that tastes.  This one was great with the chicken mentioned below.  Enjoy!

 Ingredients:
1 ½ lbs asparagus spears
4 chicken breasts, boneless, skinless cut into cubes
2Tablespoons olive oil
½ tsp salt
¼ tsp pepper
1 can cream of chicken soup, 10 ¾ oz, undiluted (get Gluten Free if you are going the gluten free route)
½ cup mayonnaise
1 tsp lemon juice
½ tsp curry powder
1 cup cheddar cheese, shredded
4 cups rice, cooked

Directions:
Place asparagus in a greased 9x13 baking dish. In a skillet over medium heat, brown the chicken in oil on both sides.  Season with salt and pepper.  Arrange chicken over asparagus.  In a bowl, combine soup, mayonnaise, lemon juice and curry powder; pour over chicken.  Cover and bake at 375F for 40 minutes or until chicken is tender and juices run clear.  Sprinkle with cheese.  Place back into the over until the cheese has melted. Let stand 5 minutes before serving.  Serve over rice.
